Tasting note
A brilliant, intense yellow characterizes the Beyond the Clouds white wine cuvée. Exotic fruits on the nose, rich, soft fullness paired with great freshness on the palate. A dignified, excellent cuvée with good aging potential. Perfect barrique aging without dominating the subtle fruit aromas.
Culinary recommendation
Flaschenpost team tip: Goes well with fish with herbs, goat cheese and soft cheese.
Vinification
As soon as Chardonnay is at the peak of its maturity, the various classic grape varieties are harvested at the same time. The special feature of vinification is the joint pressing and fermentation of the grapes in French barriques. After fermentation, they are stirred weekly for 3 months (battonage). After aging in barriques for 10 months, the wine is stored in the bottle for at least 6 months.
