Tasting note
Bright, brilliant, crystal-clear straw yellow. Fine, elegant and persistent perlage with a full crown. The scent is intense, of white elderflowers and jasmine, saffron and almonds, tropical fruits and citrus fruits, accompanied by a fascinating note of flint and incense.
Culinary recommendation
Goes well with aperitif, fish, crustaceans, veal.
Vinification
The harvest took place on August 23, 2016 and was carried out by hand in small 13 kg boxes. All individual layers were spontaneously fermented and 56% aged in 228L pice and 44% in steel tanks on fine yeast. Second fermentation using the traditional method with aging on the yeast for 70 months. Manual remuage and dégorgement à la volée with zero dosage.
