About the wine

Borgogno is one of the oldest wine-growing houses in the Langhe region of Piedmont and is considered a true empire in Barolo. Bartolomeo Borgogno laid the foundation stone in 1761 with the construction of a cellar. Today, Borgogno has 20 hectares of best vineyards in the crus of Cannubi, Liste, Rue, Fossati and San Pietro. With the aim of presenting long-aged Barolos to wine lovers, Borgogno has created an excellent reputation, particularly with its extensive collection of older vintages.

Tasting note
Intense ruby red with garnet reflections. Direct and precise, it only develops its full potential when it matures in the bottle. On the nose, ripe red fruits, black pepper, licorice, spices and the incense note typical of the Barolo list. Firm and fresh on the palate, with perfectly integrated tannins. A profound, expressive wine with great aging potential.
Culinary recommendation
Goes well with beef, game, cheese, stews, Italian cuisine.
Vinification
Spontaneous fermentation takes place with local yeasts over a period of around twelve days in concrete tanks. The temperature starts at 22—25°C and rises to 29—30°C by the end of fermentation. This is followed by maceration with submerged pomacehat, which lasts between 40 and 60 days depending on the vintage and is kept constant at 29°C. After stripping, malolactic fermentation begins, which lasts around 15 days at 22°C. The wine is then aged for four years in 4,500 liter Slavonian oak barrels before being refined in the bottle for a further six months.
