About the wine
With experience and intuition, the winemaker from the Italian winery Domenico Clerico masters this red wine in the sunny and fertile countryside of Piedmont. If we can offer something special for Christmas 2021, it's this outstanding Nebbiolo 2017 — Barolo Ginestra Pajana DOCG. Flaschenpöstler tip: Combine this Nebbiolo with truffle risotto or burrata.

Tasting note
The vines that Domenico Clerico was able to purchase in Monforte in Ginestra in 1990 were already twenty years of age or more. Today, the oldest vines can look back on a whopping fifty harvests. The wine that Domenico Clerico obtains from it shows the powerful structure that is typical of Monforte and Ginestra, with the corresponding very good aging potential. After a relatively long maceration (around 25 days), the Pajana is aged in barriques for 6 months, which cleverly increases the aromatic complexity and gives the tannins their soft roundness. Since the 2016 vintage, Pajana has remained in large oak barrels for a further 18 months.

Goes well with veal ragout/ precious pieces, lamb ragout/ precious pieces, mushrooms, beef.
