Tasting note
Brilliant garnet red with purple reflections. On the nose, fine notes of berries, violets and warm spices. Full-bodied and well-structured on the palate. Juicy, finely honed tannins. The nebbiolotypical acid is very well bound and balanced. Again, aromas of red berries, a bit herbal. Medium-long finish with an elegant, long finish.
Culinary recommendation
Goes well with brasato, coniglio, game or cheese.
Vinification
The Nebbiolo grapes come from the famous sites around Monforte, Serralunga and Castiglione Falletto. Harvesting by hand and gently squeezing the grapes is followed by maceration. The young wine is then aged for two years in French and Slavonian oak barrels of 50 to 75 hl, a small portion also in two-year barriques. The wine is then aged in the bottle for twelve months.
