About the wine

The blooming and fertile landscapes of Piedmont give us these grapes, from which the winemaker from the Italian winery Domenico Clerico conjures up this red wine with refinement and experience. We have a special, biting Nebbiolo from 2013 for you, which is a source of enthusiasm among many wine connoisseurs. The Flaschenpöstler promise a dining experience when you serve this Nebbiolo with prosciutto or burrata.

Tasting note
Aeroplano selvatico (in dialect “Aeroplan servay”), the wild plane - that's what Domenico Clerico's father called his boy, who often had his head in the clouds. In 2005, Domenico was able to lease vines in Serralunga, his only ones that are not in the municipality of Monforte. Two years later, he launched the first bottling, which he named after his nickname. A beautiful, very expressive wine, exquisitely scented of dark fruits, elegant and fine on the palate and with lots of fruit and a long aftertaste. The vineyard covers only 1.5 hectares. The average age of the vines is just under 30 years and the yield is 5500 kilograms per hectare. The pressing is intensive and lasts around a month. This is followed by 6 months in barriques and a further 30 months in large Slavonian oak barrels. Typical of a Barolo from Serralunga, the Aeroplanservaj has a powerful structure, created by the iron and phosphorous soil, but also by the associated extensive pressing and the long stay in oak barrels.
Culinary recommendation
Goes well with veal ragout/ precious pieces, creamy cheese.
Vinification
A few words about vinification: The vineyard covers 1.5 hectares. The average age of the vines is 25 years and the yield is 5500 kilograms per hectare. The harvest usually takes place in the second half of October. The maceration in the rotor tank takes around a month. For the following 26 to 36 months, the wine matures in French barriques, 80 percent of which are new wood and 20 percent are annuals. Production: 6500 bottles.
