About the wine
The Sartirano family, whose San Silvestro winery is based in Novello, has been reinterpreting the passito based on the Barbera grape for three years. Half of the grapes stay on the vine longer to achieve a concentration of aromas and sugar, while the other half is dried. The vinification takes place separately, and after fermentation, the wines are blended and aged in French barriques for six months. The full-bodied flatterer also visually impresses with a clear and trendy label.
