With the brothers Giovanni and Silvano Pasquero Elia, you can feel their attachment and familiarity with their plaice at every turn, but also that their family has been growing grapes in this place for five generations. They know every rock, every vine, and from tradition they know where which variety grows best, where it finds the right environment to produce grapes from which delicious wines are made. Her two Barbaresco Sorì Paitin and Vecchie Vigne are regularly among the highest rated wines in the appellation. Giovanni and Silvano produce their two wines just as skillfully and carefully from the Barbera grape variety, which differs from the various vineyards, but also from a shorter or longer maturation and its type. Some of the vines are over 30 years old and their yields are correspondingly low in a natural way. In return, however, they produce grapes that are concentrated and small-berried. These are exactly the prerequisites for producing juicy and concentrated wines that are rich in extract but are still easy to enjoy thanks to their great elegance. Fermentation takes place spontaneously, without the addition of yeasts, like all wines from this Azienda. They are also not filtered to leave them with a maximum of their own extracts.
