Tasting note
Visually, there is bright straw yellow, white-gold reflections with rapidly rising perlage. Brioche, dried lemon zest, white flowers and chalky minerality reach the nose. Full on the palate, with supportive acidity and a harmoniously woven moussage. It appears soft, is aromatic with caramelized lemon and transitions into a pleasant, medium-length finale, in which all haptic impressions end harmoniously with the bouquet.
Vinification
Fermentation takes place at 18 degrees in thermoregulated steel tanks, and the base wine is then aged in wooden barrels, the base of which has been used since 1995. It is aged on the yeast for 3-4 years before it is removed from the bottle and refilled with a dosage of 10g/L.
