Tasting note
Maremma produces some very great Merlot wines. Rocca di Frassinello has set itself the goal of not only joining this top group, but even surpassing them: a very sporting goal. The fact is that the Baffonero increases with every new year. Right from the start, the wine was impressive due to its power. With each new bottling, mineral resilience, race and balanced harmony grow. This wine has a great future ahead of it. The grapes are pressed in steel tanks for two weeks, the wine aged in new French barriques for 14 months and then bottled in around 3000 bottles.
Culinary recommendation
Goes well with grilled meat, game dishes or aged cheese.
Vinification
The grapes are harvested by hand and subjected to traditional maceration. The aging takes place in barriques.
