Tasting note
The Babić from Markus Fine Wines is a characterful yet stylistically precise red wine from the autochthonous Babić grape variety, vinified from grapes from the renowned Podgreben vineyard near Primošten — one of the most spectacular wine-growing regions in Dalmatia. The stony, barren soils and the proximity to the Adriatic Sea give the wine its distinctive minerality and depth. Annual production is strictly limited — only 1,800 bottles are filled per year. In the glass, the wine is a strong ruby garnet with purple reflections and a subtle ochre brightening. On the nose, complex aromas of fine precious wood spice, ripe red wild berries, licorice and a touch of fresh orange zest develop. On the palate, Markus Babić 2019 is juicy, silky and elegant. Notes of ripe heart cherries, delicate nougat and supple tannins are combined with a distinctive mineral freshness. The wine is balanced, long-lasting and shows no sign of opulence, but impresses with finesse and structure. It also has impressive aging potential.
Culinary recommendation
Goes well with braised lamb, game dishes or aged hard cheese.
Vinification
The grapes come from ancient, root-rich Babić vines (some over 100 years old) from extremely gravelly karst areas such as Podgreben near Primošten, with very low yields of just 2—3 grapes per vine. These old, low-growing vineyards are rooted deep in rocky soil and characterize the wine with rich minerality and terroir strength. Manual harvesting guarantees the optimal ripening phase. The rigorous selection is carried out either directly in the vineyard or after harvesting to produce only high-quality grapes. After destemming, the mash is fermented — often in small oak barrels to build up the first tannins and structure through controlled fermentation Traditional aging technology is aimed at complex aromas such as dark berries, spices and slightly smoky notes. The aging takes place in French and/or Slavonian oak, which gives rise to subtle smoky, vanilla and pepper notes in addition to mineral notes.
