Tasting note
Deep ruby red with elegant garnet reflections. This wine has very fine, intense and persistent, well-pronounced aromas with a rich bouquet ranging from fruity notes, in particular sour cherry and blackberry, to fresh, spicy notes typical of the south, such as rosemary and pepper, with an end of tertiary or aging scents where chocolate and light vanilla predominate. The final notes are full and round. Excellent aftertaste with hints of sour cherry and plum.
Culinary recommendation
Excellent with game, red meat and aged cheeses.
Vinification
Daily pumping in the first week of fermentation and then pumping every 2 days the following week. Gently press the trays. This creates the best conditions for the start of malolactic fermentation. After malolactic fermentation, two types of wood are used for wine aging, the 500-liter tonneau and the 6,000-liter large barrel.
