Tasting note
... intensive, compact and with a solid acid. Marcus Hees does the art stu again? ck to combine claim with exuberance. Complex aromas and herbal-peppery notes. Gripping minerality, drinkable acid game. With a nice touch to the palate and a full-length finish.
Culinary recommendation
It goes well with seafood, sushi, Asian-spiced dishes, goat cheese, green asparagus dishes or simply as a clear aperitif wine. It is also a great choice with grilled fish with herbs or summer cuisine with citrus dressing.
Vinification
Selective hand harvesting, spontaneous fermentation in stainless steel tanks, aging on fine yeast to accentuate freshness, depth and complexity. No refinement, minimal interventions — purist style in the sense of origin.
