Tasting note
The crystal-clear AU Chardonnay Riserva shimmering in dark straw yellow initially develops a mineral scent of flint and walnut. Gradually, an aromatic bundle of yellow, exotic fruits and flowers enriches the complex bouquet. On the palate, this wine is intense and juicy, in dialogue with a pleasant acidity and fine tannin. It demonstrates its full body and balance with a clear persistence in the finish.
Vinification
The grapes are harvested when they reach phenolic maturity and a balanced sugar/acid ratio. After gentle pressing, the must is spontaneously fermented in small oak barrels. The young wine biodegrades its acid on the yeast. After one year, the amount of wine is brought together and purified naturally in steel tanks for half a year. In the appropriate moon phase, the AU Chardonnay Riserva is bottled and aged in the bottle for another year.
