About the wine
The concept of the “organic couture” wine line Chêne Bleu the Domaine de la Verrière is based on a true story from the Middle Ages, namely the forbidden love affair of the scholar Abélard with Héloïse, his monastery student — and their son Astralabe. In 1994, Xavier Rolabe acquired the winery in an exceptional landscape, high in the “Dentelles de Montmirail” in Provence. Its restoration took more than a decade and is now presented in idyllic seclusion and equipped with the latest technology

Tasting note
Pale yellow with silver reflections. Aromatic and complex on the nose, with notes of white flowers such as lily or acacia. Tart and crunchy on the palate, with an abundance of white fruit.
Culinary recommendation
Goes well with aperitif, fish, shellfish, chicken tagine with lemon confit, fresh goat cheese or Lebanese tabbouleh.
Vinification
Cutting method: simple cordon de royat, 5 strives/cordon.No usual chemical additives and fining agents.
