Tasting note
Dark ruby red color The bouquet features pleasant fruit notes, which are reminiscent of ripe cherry and plum, and at the same time spicy notes, as well as white chocolate and nut notes. The taste is full-bodied, enveloping, soft with velvety, elegant tannins. Very long-lasting
Culinary recommendation
Goes well with grilled meats, game, roasts, pot roasts and aged cheeses. It also goes very well with black chocolate and is also an ideal meditation wine.”
Vinification
The grapes are picked by hand at the end of September and beginning of October and brought to the winery in small crates. The grapes are dried out in their own fruttaio (very well-ventilated room) for around 120 days and lose 50% of their weight as a result. Only then does winemaking begin. The gently pressed grapes fall into small stainless steel containers due to gravity. Controlled fermentation, then aging for 24-30 months, refinement in wooden barrels made from selected wood. This is followed by a further six months of refinement in the bottle.
