About the wine

With sensitivity and intuition, the winemaker from the Italian winery Ca'la Bionda masters this red wine in the beautiful and fertile countryside of Veneto. The dominant Corvina 2012 — Amarone della Valpolicella Classico is the missing puzzle piece on your wine rack. Tasting note
Powerful ruby. Ripened aromas of high intensity. There are spicy and fruity, but also balsamic notes. Fruit compote, dried flowers, well-integrated roasted aromas, a bit nutty, leather. A range of aromas of good complexity and density. Very rich in extracts on the palate, with a well-balanced acidity and powerful tannin of good quality. Again, fruit compote, warm-spicy and balsamic notes. The aftertaste is well-structured and has an aromatic persistence. An Amarone with character.
Culinary recommendation
Goes well with pot roast, black chocolate or just because.
Vinification
Depending on the variety, the grapes are carefully selected and picked by hand in the vineyard between the end of September and the end of October. After harvesting, the grapes are dried on so-called “Arelle” until at least the end of January, as is usual in Amarone production. In the process, the grapes lose around 40 percent of their own weight. At the same time, sugar, aroma and extract are concentrated, which gives the future wine a unique aroma and great concentration. After the above-mentioned drying, the grapes are fermented at low temperatures in steel tanks. After fermentation is complete, the young wine matures for 36 months partly in barriques and partly in 30 hl oak barrels. Following the marriage of the two batches, the finished wine is left in the bottle for another eight months before being sold.
