About the product

The recipe for Amaro Sibilla dates back to 1868 and was developed by Girolamo Varnelli. As a herbalist, he used his knowledge to create a bitter cure for fever for shepherds who frequently contracted malaria during their migrations. To this day, this amaro is made using the traditional method: A decoction of gentian, quinine bark and other medicinal plants is prepared over an open wood fire. It is sweetened exclusively with honey from the Sibillini Mountains before the bitter is allowed to rest and clear for a long time before bottling.

Dark and intense in the glass. On the nose, strong herbal aromas develop with notes of gentian, cinchona bark and a touch of honey. Distinctively bitter on the palate, yet harmoniously combined with spicy and slightly earthy nuances. The aftertaste is long, warm and accompanied by a fine, natural honey sweetness.
Culinary recommendation
Amaro Sibilla is ideal as a classic digestif — preferably pure at room temperature or slightly chilled. It also develops its intense herbal and bitter aromas particularly beautifully on ice. In the bar, it can also be used as a characterful ingredient in bitter cocktails or as an aromatic addition to tonic.
