Tasting note
Shiny ruby red with garnet reflections. The nose is still youthful and smells of wild berries, cherries, cassis and blackberries. Rich and juicy on the palate, pickled fruits, jasmine, jam, pistachios — up to truffle and cinnamon notes. Shows great minerality with a strong structure and a long finish.
Culinary recommendation
Goes well with fried beef, oven-baked poultry and aged soft cheese.
Vinification
After harvesting by hand, the PINOT noir grapes from the “Les Caillettes” vineyard are gently pressed and fermented in large wooden vats. The young wine then matures for 15 months, 12 of which are in 228 liter pieces.
