Tasting note
The Allesverloren Shiraz shows a strong ruby red with purple reflections in the glass and exudes lusciously opulent aromas of blackberry, cassis and blueberries with a delicate smoky touch. Juicy and full-bodied with balanced fine-grained tannin, spicy wood spice, persistent and balanced.
Culinary recommendation
It goes great with a barbeque chicken.
Vinification
The grapes for this wine come from south-facing vineyards in Malmesbury. The harvest began at the end of February, when the grapes had a distinct varietal flavor and the tannins were ripe. Each block was vinified separately. The grapes were fermented with the skin in open tanks at 25° C for five to seven days and left on the yeast for four months to impart color and flavor intensity and to give the wine sufficient structure for good aging. After malolactic fermentation, the wine was aged in a combination of a new, but mainly second and third, vines in French oak barrels and a few new American oak barrels.
