About the wine
In the lovely Tuscan hills south of Florence, the 12th century castle is surrounded by vines. The 102 hectare estate has 52 hectares of vines and 20 hectares of olive trees, the rest consists of fruit trees and forest. In recent years, the original wine cellar has been renovated with small and large wooden barrels. In addition to the production of wine, olive oil and wine vinegar, Castello di Gabbiano also offers guest rooms.

Culinary recommendation
Beef, wild boar or with hard cheese
Vinification
Temperature-controlled whole grape fermentation at 28 to 32° degrees for 12 to 15 days. The wine was then aged in French barriques for around 18 months. After moving to the bottle, the wine rested for another 6 months.
