Absimilis Extra Brut AC 2018 - Pierre Brocard

The latest creation by Thibaud Brocard. Also a Blanc de Blancs, but made from 100% Pinot Blanc (Weissburgunder). The grapes come from the “La Lemblée” vineyard in Celles-sur-Ource. Thibaud only allows the whole grapes to cold macerate for 15 days, the alcoholic fermentation takes place in concrete tanks, the malolactic fermentation in steel tanks. Sulphurization was only minimal, disgorged after three years of yeast storage. The nose shows aromas of ripe boskoop, pears and some citrus and tropical fruit, clearly underlined with notes of fine herbs, blossom honey and nuts, plus subtle maceration seasoning, a touch of tonka bean and an iodic-mineral touch. Spicy on the palate, with notes of pear cider and aperitif nuts, good supportive freshness and fine tannin structure. Serious, complex and at the same time playful with beautiful fruit and good length.
