About the wine

The story of the Zlatan Otok winery begins in the small village of Sveta Nedjelja on the island of Hvar in Croatia. These beautiful vineyards are located on the island's unique southern slopes, where the Augustinian monks began growing grapes as early as the 16th century. The founder of this winery and father of the current owners, Zlatan Plenković, was a fisherman and was born in the village of Sveta Nedjelja. He founded a small family business and bottled his first bottle of wine in 1986. In 1991, the family founded the company Vitis, which changed the name to Zlatan Otok two years later. Zlatan Plenković passed on his knowledge and love of wine to his children at an early age. Marin and Nikola Plenković, the children, became partners and founded the sister company Vinoline. Vinoline is the largest family winery and is located near the town of Šibenik. Today, Marin and Nikola Plenković own more than 120 hectares of vineyards on the island and the mainland. They also buy grapes from another 50 hectares from subcontractors. They select these particularly carefully.

Tasting note
Rich ruby red. Elegant, fruity nose. This is accompanied by fine aromas of warm spices, covered by dark fruits, sour cherries and soft well-integrated tannins. Good length agang. This wine comes from our vineyards near the town of Makarska under the Biokovo mountain, which have proven to be ideal for growing Plavac mali, the most important Croatian red grape variety. After hand harvesting and processing the grapes, the wine matures in large wooden and stainless steel barrels. The Zlatan Plavac Novus from the Makarska region is a true expression of Dalmatian terroir and a wine with a distinctive southern character.
Culinary recommendation
Goes well with pasta or pizza.
Vinification
The harvest is done by hand and usually takes place from early to mid-September. After harvesting, the grapes are destemmed and lightly pressed. This is followed by fermentation at controlled 26 to 28 degrees Celsius in steel tanks for ten to twelve days. The young wine then matures in oak wood in large barrels of 5 — 8,000 liters. The Novus is then left in the bottle for a few months before it is sold.
