Tasting note
Sour cherry and ripe cranberry with notes of licorice, dark chocolate, cinnamon and allspice are supported by delicate floral notes. A hearty, structured wine with chalky tannins and a mineral center on the palate, ending in a fresh, concentrated finish with a hint of tobacco that lingers on the palate.
Culinary recommendation
Goes well with pork, duck, veal, light curries and aged hard cheese.
Vinification
The grapes harvested by hand were sorted and selected in the vineyard to ensure that only the best quality grapes arrived in the wine cellar. On arrival, the grapes were processed and the alcoholic fermentation of the entire berries began in French oak barrels and stainless steel tanks. Pumping twice a day resulted in the extraction of tannins and aromas. After fermentation, the wine aged for 12 months in 300-liter French oak barrels (30% new oak).
