Tasting note
Brilliant golden color On the nose, aromas of citrus, quince, ripe apples and roasted almonds. Nuances of brioche and floral notes are also recognizable. On the palate, with fresh acidity, fine perlage and a lasting, aromatic finish.
Culinary recommendation
Goes well with aperitifs, light meals, paella and fish.
Vinification
The organically grown grape varieties are harvested at night to avoid high temperatures and premature fermentation. The rapid transport to the wine cellar and cooling at 10 degrees Celsius prevent the grape skins from staining the must. Each grape variety is fermented individually in steel tanks, then married and bottled. The wine ferments for the second time in the bottle and then rests horizontally on the fine yeast for at least 12 months.
