Tasting note
The wine has a beautiful ruby red color. The bouquet is intense, complex and very fine, with notes of ripe red berry fruits, which are gradually complemented by spicy notes. On the palate, it immediately appears complex, structured, with fine and velvety tannin. The finale is very long.
Culinary recommendation
Ideal with braised lamb, pasta with strong sauces, grilled meat or aged pecorino.
Vinification
The manual, hand-picked harvest takes place in mid-October. The mash was fermented in temperature-controlled concrete tanks for approximately 28 days. The young wine was then aged for a further 10 months in large, 3000 liter wooden vats.
