Tasting note
After harvesting, the grapes are stored in a cooled room for a few days to highlight their aromatic richness. After a 12-hour maceration on the skins, they are gently pressed and fermented for 12 to 15 days at 17°C. This is followed by ageing for 5 months in stainless steel tanks.
Culinary recommendation
Goes well with aperitifs and starters, asparagus and fish dishes.
