About the wine

The Comtes de Champagne Blanc de Blancs is only vinified in exceptional years. It consists exclusively of wines pressed for the first time, which come from the large crus of the Côte des Blancs planted with Chardonnay vines. The grapes are harvested by hand and with great care and brought to the nearby wine presses. Only the first pressing, the so-called “cuvée”, is used for the Comtes de Champagne. 5% of the Chardonnay was aged in French oak for 4 months and the entire batch underwent biological acid degradation. For at least 5 years, the Comtes de Champagne has enough time to develop its full size and character before it is disgorged.

Tasting note
This champagne is nervously tight, with an impressive variety of aromas. Notes of crushed almonds, chalk, white grapefruit, digestive cookies, lemons and apricot kernels spread through the glass. A touch of fennel and white pepper gives it extra sophistication. Its depth and minerality give it a powerful presence, while the perlage is incredibly fine and the mouthfeel is considerable. The persistently long finale is a treat for the senses. This champagne is not expected to develop its full potential until 2024.

Vinification
The world-famous cuvée is subject to strict control by Taittinger. Only the purest juice of the Chardonnay grape is used. 5% of the base wine is fermented in new barriques, the rest in steel tanks. Very long aging on the yeast. With great patience, the Comtes de Champagne Blanc de Blancs always ages for at least 10 years in the chalk quarries under Saint-Nicaise before it goes on sale. A fantastic blanc de blanc. So complex and complex, aromas of lemon curd, chalk, hazelnuts, pastries, baked apples and almond croissants. Structured and dense, incredibly fine perlage. Delicious salty notes on the aftertaste. Just a wonderful year. Here you can't decide: drink or store right away. Both are good ideas!
