Tasting note
A classy golden color. Exotic but concentrated, with aromas of peach, apricot and yellow apple. Subtle wood and a bright, sparkling finish. Nice mandarin and orange salt aromas on the palate, followed by a very fine acidity.
Culinary recommendation
It goes great with a mil-spicy chicken curry.
Vinification
David Trafford's Sijnn Project is located in Malgas on the Breede River. Forty kilometers from all other vineyards, the incredibly rocky soil and the microclimate influenced by the Breede River are unique in South Africa. After manual harvesting, the grapes are sorted on a cool morning. There, they are gently crushed and cold macerated for 2 hours and then pressed in a basket press. The Sijnn White is fermented in 400L and 700L barrels for approx. 10 months and then bottled unfiltered.
