About the wine

Gramona is a family-owned winery that was founded back in 1881 and is now managed by Jaume and Xavier Gramona in the 5th generation. While other sparkling wine producers in Penedés themselves have responded to market challenges with quantity under the D.O. CAVA quality label, Gramona, with a few, selected winemakers under the EU brand CORPINNAT, has been unconditionally committed to quality and has long been regarded as the best and finest address for Spanish sparkling wines. Vinification involves rigorous aging on fine lees, often several years, and grapes from the best vineyards of Pénedes, such as La Plane and the steep slopes of Mas Escorpi. Gramona CORPINNAT have a firm structure, harmony and fine acidity like only large champagnes, but in all this they have greater expressivity. Lots of style, very sexy.

Tasting note
Silent Retreat - Silent, soft and delicate the light, white to green fruit, with your eyes closed, you breathe it in deeply, this refreshing coolness, dive in, discover more and more, deeper, a whiff of bright, juicy exotic fruit, then it becomes warm inside: the soft wood tone spreads out. Let go on the palate, relaxation, so smooth, warm security, yet with a lightness and freshness, purity that almost takes you out of quiet dreaming and allows you to move on to action: ripe, striving acidity, the fine, bright minerality. What a mental cleansing. How rarely is Sauvignon Blanc able to radiate peace and freshness in equal measure!
Culinary recommendation
Von den Flaschenpöstlern empfohlen: Savinat harmoniert perfekt mit Geisskäse, Muscheln und weissem Fleisch.
Vinification
Very selective reading by hand. Gentle pressing, fermentation with the vineyard's own yeasts in steel tanks, further fermentation of 1/3 each in new, one-year and two-year French oak barrels.
