Tasting note
Light yellow in color with a hint of lime green, on the nose it shows intense gooseberry aromas with complex notes of tropical, citrus blossoms and green figs. On the palate, it is rich and full-bodied. Filling start, a creamy texture due to the natural acid and yeast contact, and a persistent, structured finish.
Vinification
The grapes were crushed and destemmed. There was skin contact of 6 hours. The juice was then pressed and cold settled at 8° C. for two days. He was inoculated with a yeast strain selected for the terroir. After fermentation, the wine was left on the fine lees for six months and then clarified for bottling. For added complexity, 10% was fermented in 500-liter second-fill French oak barrels.
