Tasting note
Deep ruby red with purple reflections. On the nose, intense aromas of ripe plums, cherries and dried fruits, complemented by spicy notes of vanilla and sweet tobacco. The palate is full-bodied, soft and harmonious with ripe tannins and a pleasantly persistent fruit sweetness on the finish.
Culinary recommendation
It goes well with hearty meat dishes, barbecues, braised beef or lamb as well as with aged cheese. It is also an ideal accompaniment to pasta with spicy sauces or game dishes.
Vinification
The grapes come from the Salento region in Puglia and are harvested late to achieve maximum ripeness and concentration. The must ferments at controlled temperature in stainless steel tanks. The wine is then aged in oak barrels for several months to refine its structure and aromas.
