Vinification
Verdigny is a village located in the heart of the Sancerre appellation. The cuvée “La Chaudouillonne” comes from selected vineyards grown on the famous “Caillottes” terroir of Verdigny. All villages cuvées by Fournier Pèr et Fils are their interpretation of the respective village style. When harvesting, the vineyards are selected according to their soil conditions and grape taste. Each vineyard benefits from the most suitable farming techniques for its terroir. The juices ferment at low temperatures in small tanks to promote all the nuances of the village. Each tank is stored on fine yeast for 6-8 months before bottling.
