Tasting note
The Salvajes Cadalso impresses on the nose with delicate aromas of sweet wild berries, floral notes and fine herbal seasoning. Very clear, fresh and subtle on the palate with a harmonious balance of acidity and ripe tannins. Elegant, persistent finish with floral notes and spices. The production is only 1,800 bottles!
Vinification
After a ten-day maceration with natural yeasts, the manually harvested and destemmed grapes were fermented in steel tanks. The Salvajes Cadalso then matured for nine months in used 500-liter barrels.
