About the wine
Intense bouquet with notes of red fruits, berries and cherries, underlined with spicy notes, delicate vanilla and a touch of tobacco. On the palate, strong, rich in tannins and concentrated, but soft thanks to the perfect ripeness of the grapes. Persistent, highly aromatic
Tasting note
Rosso Piceno DOC Davore's distinctive bouquet of black pepper, spices and tobacco plays virtuously with your sense of smell. Next, fruity nuances of red plum, strawberry and fig will resolutely and consciously convince your taste buds. A red wine with a strong body and outstanding acidity, which develops its complex structure vigorously with rich tannins on the tongue and palate.
Culinary recommendation
Goes well with racy pasta dishes, red meat, medium-aged cheese, grilled meats
Vinification
The grapes picked by hand go straight to the cellar and are fermented at a controlled temperature (24-26°C). However, a small portion of Montepulciano grapes are left hanging on the vine longer (rosinized). The duration of marceration is optimised for the respective grape variety and harvest time. After that, immediate biological acid degradation for optimal structural development. Aging in barriques for 13 months (80% French oak, 20% American oak).
