About the wine

Founded by Aimé Sabon in 1967 and rose to the top with the region, where the Domaine is now an integral part of Christophe and Isabelle Sabon. In the small appellation of Châteauneuf-du-Pape alone, Janasse owns almost 20 ha with vines up to over 100 years old. A treasure that is maintained and organically farmed here. Even in the cellar, only minimal intervention is made to let the unique terroirs speak for themselves: spontaneous fermentation, no filtration, hardly any new wood. The wines are fascinating unique, with an original, classic vein and noble elegance, with wonderful freshness and comparatively low alcohol levels for the region. Châteauneuf-du-Pape straight out of a picture book, without sweet excesses. World class!

Tasting note
Mistral - First, the wind warms up on land, absorbs its scent: berries, wild essential herbs, citrus, still pleasantly soft with its mineral freshness. On the palate, the intensity increases, cools down, becomes tart, fresher, more mineral, and when the bite subsides a bit, it immediately seems warmer, milder, more aromatic: the delicious berries and it flatters. Surprisingly mineral, ethereal rosé that really invigorates but also spoils.
Culinary recommendation
It goes well with Mediterranean dishes such as grilled vegetables, antipasti or light fish dishes. Its lively acidity and fine spiciness go particularly well with spicy dishes such as grilled chicken or Indian curries. It is also an excellent choice as an aperitif or with summer salads.
Vinification
Selective reading by hand. Half saignée process and pressing, fermentation with the vineyard's own yeasts in steel tanks and aging for 4 months in vats.
