Tasting note
Compared to gray and red slate, blue slate has the coolest style. Fruity notes of mirabelles and citrus fruits, plus herbaceous and floral. Razor-sharp on the palate and very precise with lots of pull.
Culinary recommendation
The high acidity makes blue slate a good partner for fried vegetables, sausages or creamy soups. It is worth letting the wine rest for a few years or carafing at a young age
