Tasting note
Slightly reductive start in the nose. With a little air, there is intense slate spice, flint, chalk, orange-lime peel and ethereal herbal notes. Compact palate with a crunchy acidity that harmonizes wonderfully with the remaining sugar. Plus a fine saline, chalky minerality on the lingering aftertaste. Enormous aging potential!
Vinification
The grapes are harvested by hand and then spontaneously fermented in steel tanks, without subsequent inoculation or addition of enzymes. Artificial acidification or deacidification never existed and never will exist. After a long yeast storage period, the wines are minimally sulfurized and closed with a screw cap.
