Tasting note
Medium yellow-green, silver reflections. Fine white peach fruit, underlaid with hints of mango and blossom honey, mineral touch, still a bit shy. Complex, juicy yellow fruit, finesse rich acidity, mineral-salty finish, limes in the aftertaste, good future potential.
Culinary recommendation
Goes well with white meats such as poultry and veal, as well as fish.
Vinification
The fully ripe grapes were picked by hand in several passes in mid-October and gently brought to the press house in stackable boxes on sprung trailers. The grapes were destemmed, crushed and macerated for a few hours (maceration time) to optimize the aroma concentration in the grape must. The must is then placed in large wooden barrels made of local oak and is slowly fermented with the grape's own yeasts. The wine is then stored on its fine yeast. The Riesling is bottled at the beginning of August.
