Tasting note
Brilliant, intense ruby red. In the glass, it gives off wonderful aromas of ripe, dark fruits, which are accompanied by scents of red berries. On the palate, Rancore is fine-grained, juicy and very elegant. The combination with a little Merlot and Pinot makes the Sangiovese soft and rounded. Andrea Paoletti is not only looking for strength and power, finesse and aroma are just as important to him.
Culinary recommendation
It goes well with poultry, duck, tender beef and veal, and pasta with tomato or ragù sauces.
Vinification
Fermentation at a controlled temperature of 30 degrees for 20 to 28 days. Ageing in French wood for 14 months and storage in bottle for six months.
