Tasting note
The nose is extremely varied, ethereally spicy, plus sour cherries, rose hips and fine roasted aromas. The first sip seduces with a soft, long start, lots of melting, then the potential of the pommard is revealed with lots of pressure and ripe, fine-grained tannin.
Culinary recommendation
Goes well with beef — from steaks to stroganoff to tartare or slow-cooked roast from the oven.
Vinification
Careful handpicking. Fermentation takes place in steel tanks and, after biological acid degradation, barrels are aged for 18 months.
