Tasting note
Straw yellow color. Wonderfully fresh and mineral on the nose, with fine notes of white peaches and ripe apples. Dry and lively on the palate, with a nice tension.
Culinary recommendation
As an aperitif, also great with raw ham or mozzarella.
Vinification
The grapes for this wonderful Prosecco come from Glera vines with an average age of 40 years from the most traditional vineyards of Col San Martino. After maceration on the skins, the grapes are gently pressed and fermented at a controlled temperature. The second fermentation takes place in a pressure tank at 12°C for about 60 days. The wine then rests on its own yeasts for a further 120 days.
