Tasting note
Private Collection Pinotage 2022 shows red and dark fruits in the foreground with notes of blackcurrants, dark cherries, rose water and forest soil. Whole berry fermentation gives the impression of an attractive carbon dioxide note. Subtle notes of mocha and dark chocolate round off the bouquet. The palate has a smooth start, tannin and acidity are well balanced and give the wine a pleasant mouthfeel.
Culinary recommendation
Goes well with game meat, curry dishes or a creamy mushroom risotto.
Vinification
The vines grow mostly weathered Table Mountain sandstone soils. The grapes were picked by hand at optimal phenolic ripeness, destemmed and fermented as whole berries in open fermentation containers. Regular gentle pumping and cool fermentation temperatures ensure gentle extraction. The wine was not allowed to stand on the skins for an extended period of time to avoid any bitterness at the end. The wine was aged in used 300 liter French oak barrels for 12 months.
