Tasting note
Soft pastille made from raspberry and strawberry fruits at the start, overlaid with subtle ginger spice, polished saddle leather, freshly cut pomegranate and a nuance of bruised rooibos tea leaves. Beautiful salty notes reflect the spontaneously fermented character and maritime origin of the wine. Bright start with a focused raspberry core, a lively texture and a daring, structured note, all of which develop into a pleasant, long-lasting finish.
Vinification
The pinot ferments spontaneously dry on the skins in 1-ton fermentation tanks with an open lid and then undergoes malolactic fermentation in the barrel. This vintage matured for 7 months in 300 liters of selected Burgundian French oak. 40% of the oak was new, 40% in the first bottling and 20% in the second bottling to highlight the fruit of this delicate and elegant Pinot Noir.
