Tasting note
The Chamonix Pinot Noir Reserve shows a ruby red color with notes of cherries, wild red berries, crushed black pepper and violets on the nose. Although firm in structure and intense in flavor, the textures are soft and round and expand over time to exceptional opulence and length on the palate. It should reach its prime in 5 to 8 years after release.
Vinification
The grapes are destemmed but not crushed, and the must is fermented naturally in wooden and concrete barrels of spontaneous yeast on the skins for no more than 16 days, often knocking down the lid. The malolactic fermentation takes place naturally and the wine ages for 16 months in French barriques with around 60% new oak.
