About the wine
Bodegas Bhilar is a boutique winery in Elvillar, Rioja Alavesa, run by David Sampedro and Melanie Hickman. Their goal is to make terroir wines with a soul, respect the land, work only with local grapes and share their unique wines with good people with positive energy.

Tasting note
An amber-coloured white wine with notes of pollen, beeswax and quince jelly. On the palate, the wine is reminiscent of traditional, oxidative wines from Rioja. It is complex, well-structured with mineral notes and aromas of quince and yellow plums. A serious wine with good balance and length. unique
Culinary recommendation
Goes well with sea fish, light meats, hard cheeses, paella.
Vinification
The grapes are harvested by hand, destemmed and squeezed with the feet. Fermentation takes place with natural yeasts on the skin, after which they are pressed. The wine is transferred to used 225 liter oak barrels, in which the wine is aged for six years. The barrels are not refilled, which is why they are also referred to as oxidative expansion.
