Tasting note
Complex bouquet of wild berries, ripe blackberries, spicy-ethric notes and fine roasted aromas. On the palate, a long, soft start, elegant and complex structure, plus an extremely fine-grained, ripe tannin with lots of pressure and aftertaste. The Corix Noires ends with a mineral, almost infinite finish.
Culinary recommendation
Goes well with all kinds of stews — whether it's lamb gigot, beef shoulder, roast pork or ossobuco.
Vinification
Manual harvest, classic mash fermentation for 14 to 16 days, aging for 14 to 16 months in French barriques with around a third of new wood content.
