About the wine

Working part-time in winegrowing since 1890, the Knoll family has dedicated themselves entirely to viticulture in Würzburg since 1980 and has since set accents in the Franconian wine-growing region with their joy of experimentation, wines and, last but not least, architectural features. The winery (VDP member since 2001) includes 25 ha. Many steep slopes are sometimes so densely planted that every job there is carried out by hand and that is a lot in biodynamic viticulture, where all chemical “helpers” are dispensed with. With Ludwig Knoll and Dominik Diefenbach, there is also the courage to refrain and experiment in the cellar, e.g. the expansion in concrete and amphorae, the detailed selection of wood. This is modern, new ways in harmony with nature! Independent and direct wines, individualists with a good soul, for and not against. Great personalities who are now finally available in Switzerland!

Tasting note
A dagger? Quite the opposite: for the first time. Briefly uncertain, shows a lot, a little louder, more clothes than character, the expansion in the wood, rich voice, but then with every minute quieter, finer, more subtle, and freer, the clear creamy pear fruit now emerges, can later also set punchlines, a touch of cinnamon, also a touch of green peppers, mineral, light and wide, blossoms, now just bright charm. On the palate, first emphasizing the appearance, then soon a bright, ripe pear fruit, spirit, fullness and harmony, without harshness, white chocolate, ever freer, brighter, now lots of spicy goodies, just mind and soul, completely forgetting all appearances. Ripe, variety-typical White Burgundy - be sure to leave some time, it will be ever brighter and brighter and more elegant!
Culinary recommendation
Flaschenpöstler-Tipp: Montonia Weissburgunder trocken passt perfekt zu Hartkäse, Tapas und Pulpo.
Vinification
Selective harvest of the highly ripe grapes by hand. Fermentation with the vineyard's own yeasts and 6 months of aging on fine yeast in large oak barrels.
