Tasting note
A full-bodied and elegant wine! Aromas of ripe cherries, cooked plums and rose hip jam, underpinned with spicy notes of dried culinary herbs and some licorice. Extremely dense fruit in the mouth, finely carried by legant tannin, very balanced, wide and flowing smoothly into the lingering finish.
Culinary recommendation
A full-bodied and elegant wine whose qualities are best appreciated with red meat, roasts and game dishes.
Vinification
When harvested, only the best grapes are harvested by hand, fully ripe and completely healthy. The slightly dried and cool grapes are destemmed and fermented in steel tanks at a controlled temperature of 12°C. Ageing in steel tanks and large oak barrels takes around nine months. The wine is then stored in the bottle for a further nine months to achieve the best balance between fruity, varietal and spicy notes.
