Culinary recommendation
Goes well with foie gras tureen, gnocchi, porcini ravioli, venison, turkey, apicius duck, pata negra presa, mushroom risotto (porcini mushrooms, chanterelle, shiitake), lamb shoulder with oriental sauce, beef and not too strong cheese.
Vinification
For many years, the entire winery has been managed according to environmentally friendly principles. Ripeness monitoring to determine harvest time, yield limit, harvest and hand-pick to keep berries intact. Extra. Sorting out the best berries upon arrival in the cellar. Gentle pressing. Fermentation for approx. 3 weeks before the wine is aged on the fine yeast in French oak barrels for approx. 15 months.
